As before, you are welcome to the website www.vinarijavalcic. They say that during the winter we have too much work in the vineyard and winery. To put it bluntly... that's not true. Pillars that have broken or bent are repaired, manure is "thrown", pruning shears are sharpened, the condition of the vessels in which the wine from the 2025 harvest is settled, sales, deliveries, presentations are going on... But there are no jobs that need to be done now or better yet, yesterday. So, we can relax a little and devote ourselves to activities bordering on hobbies. For example, cooking.
Traveling around the world, wherever I stayed for work, I tried to find a recipe book, specific to a given country and region. There are a number of recipes for making "home made" pâté, but I would single out one that I heard from a colleague in Paris, at a reception on the occasion of the OIE (World Organization for Epizootic Diseases) meeting, where, among other things, turkey was served, covered with pâté. I certainly cannot describe the appearance, but I can introduce you to the secret that the cook gave me, whom I barely found in the corridors of the castle, where the reception was held.
So: 0.5 kg of pork (better than chicken, beef or venison) liver, two large heads of onion (cut into quarters), two bay leaves and 300 g (cut into larger pieces) of dry bacon, put in a fireproof dish, cover and put in the oven at 200 °C. Bake for about half an hour. When the mass cools down, remove the bay leaves and add spices (to taste): salt, pepper (green, white, black), ground allspice (pimento), ground nutmeg, oregano and basil. Add two boiled egg yolks, three crushed garlic cloves and a spoonful of butter. Put in a "chopper" and make a paste. I grind one third with a stick mixer. Place in refractory containers (smaller) and bake at 200 °C for 15-20 minutes. I put it in a cold oven and turn the switch to 200 °C. When it reaches temperature, I turn it off and leave the dishes to cool in the oven. Take out and cover with aluminum foil. Leave in the refrigerator until use. It can be kept in the fridge for about 2 weeks.
Of course, if you have good "sourdough" bread and Valčić dry red wine with it, the enjoyment will be complete.
And here is one interesting thing. Of course, a judge, taster or "ordinary" wine lover can be a man or a woman. However, ask yourself how many times a heated debate has developed over the differences between the sexes. As vets, we were taught that there are primary and secondary sex characteristics. What is interesting about the "wine story" is the fact that in the same wine, a man recognizes different aromas compared to a woman. women are from Venus and men are from Mars. Of course, together we are complete.
